In recent years, probiotics have gained significant attention for their role in human health, particularly in the functional food industry, due to their modulatory effects on gut and immune function. Available in various forms—dietary supplements, fermented foods, and topical applications—probiotics are increasingly being incorporated into beverages, a trend gaining popularity due to its multifaceted benefits. Both dairy and non-dairy probiotic beverages offer an effective way to introduce beneficial microorganisms into the diet, supporting gut microbiota balance, enhancing immune responses, and potentially aiding in the prevention and management of various health conditions. Rising consumer demand for health-focused beverages is driving innovation in probiotic formulations, opening new avenues in functional nutrition. This review provides a comprehensive overview of probiotic beverages, including their classification, health benefits, and market growth. It also addresses key challenges in maintaining probiotic viability within diverse beverage matrices and explores emerging strategies to improve their stability and effectiveness.
